Anyone got a good recipie for brined and smoked pheasant?
I'm gonna brine one in sherry and sea salt, cover it with basil leaves, roasted green chilli's, onion and bacon and smoke it over cherry wood for about 2 hrs. I think this will come out great, but would like your own recipies to try in the future.
By the way, I use a Traeger grill............love it.
